Chicken and Champagne or sparkling wine may be one of the best pairings in existence, especially when using a Blanc de Blanc bubbly. Otherwise, most chicken and duck dishes call for white wines with good acidity (think Chenin Blanc-based blends, Semillon and Sauvignon), dry rosé or reds like Gamay, Pinot Noir, Cinsault and lighter versions of Grenache.
