Venison dishes can be intensely flavoured, thus shouting for a big, tannin-heavy red. Carignan is a winner, but straight Petit Verdot, Nebbiolo, Carménère or Bordeaux blends work well too. Middle Eastern-style goat dishes work with fuller, floral-style whites (the Rhone white varietals do well here) and goat in general goes well with soft, balanced reds: think New World Shiraz blends and Merlot.
