Choosing Organic. Of course it’s a good idea to eat organic and local whenever possible, but we understand it’s a personal choice based on geography, budget, and other resources. As such, we encourage you to prioritize buying organic produce that is on the Environmental Working Group’s “Dirty Dozen” list (available at ewg.org/foodnews/dirty_dozen_list.php or via their “Dirty Dozen” app).
It’s All Vegan! This is a 100 percent plant-based cookbook, so we omit the word “vegan” where it would be superfluous. So for example, we say “chocolate chips,” not “vegan chocolate chips,” even though we mean the latter.
