We have included serving info for each recipe as a whole, as we know that every reader will divide the dish differently and in varying portion sizes. An Ironman in training may take down a whole pan of Baked Deep-Dish Apple Pancake at breakfast the day after an event, while a power yogi may be satisfied with just a slice.

We opted against including nutrition info for every recipe, as these whole-food, plant-based recipes are inherently healthy and appropriate even for those on a reduced-calorie diet. However, if you do count calories or track your macros, you can find the nutrition facts for every recipe in this book at nomeatathlete.com/nutrition-info.
