Full-bodied, robust red wines are a must here. Italian Barolo and Barbaresco, Brunello di Montalcino, and young Tuscan blends of Cabernet Sauvignon and Sangiovese (Grifi, Tignanello) are good choices. Red Bordeaux, Cahors, Côte Rôtie, and Hermitage from France or California Cabernet Sauvignon and full-bodied Syrah would also marry well.
