A veal version of Rigatoni alla Norma,. Italian wines are just the right choice: Spanna, Gattinara, Nebbiolo d’Alba, or Chianti. For non-Italian wines, Provençal reds like Bandol and Palette go well, as do some of the fruity and refreshing Côtes-du-Rhône and Côtes du Ventoux wines. Spanish Rioja and Portuguese Minho red wines and those of Bairrada are other choices.
