You don’t need a cookbook to tell you how to broil or grill a lamb chop, but I can tell you that the secret to tasty lamb chops is a great marinade. The advantage of a marinade is that you can do the little bit of work required a few days ahead, then casually slap the meat on the grill and wait for the compliments. Can anything this good be so easy? Yes.
The following recipes are two of the best marinades for lamb chops that I know. If you really feel like splurging, marinate and grill well-trimmed lamb loins. Serve them medium-rare, sliced across the grain.
