Americans may be surprised to learn that the French watch television during meals. But my husband Jean and I often do in the evenings, and la pizza Jeannette makes an easy meal to serve while everyone sits and enjoys a favorite show.

This pizza dish–really a rectangular vegetable tart, and very different from what you find in the States–is named for my precious Provençale cook Jeannette, who has cooked lovely simple food in my house for twenty years. She knows many things, my Jeannette; we have learned a lot together, and this pizza has her touch.
