Freshly caught crab is one of the most delicious things to eat, whether they are the large French tourteaux, or the American Dungeness found on the West Coast. Of course, eating them simply boiled in a good court bouillon and served warm with a lemon butter, or cold with a creamy mayonnaise, is what any lover of fresh crab will prefer, as nothing can interfere with the delicate, sweet taste.
