The spirit is the main part of a cocktail; these recipes add acidity (acid solutions), salt, sweetness and bitterness – a bit like the way chefs use salt and pepper for seasoning, they all change and adjust flavour. I know there are a lot of flavoured syrups, but I really believe that if you’re adding a sugar syrup, why not add something flavoured to give the drink a different dimension. If you’ve got a drink that’s too acidic and you’re simply trying to reduce that, you don’t want to add flavour, so you just need a plain sugar syrup.
