a. On a floured surface, roll each rounded wedge of dough under your palm to stretch a smooth even skin all around (step 5).
b. Aftet the balls of dough have rested for 15 minutes, begin to roll them out by pressing them flat onto a floured surface with the palm of your hand (step 8).
c. Then with a rolling pin, press very hard to roll each piece of dough into a 7-inch (17½-cm) disk (step 8).
