The crab cakes are so named because they are entirely different from the Thai crab cakes we are now familiar with; these use traditional English seasonings, rather than chilli and lime leaf. The main course is easy to make, with full instructions for making the pasta, and the game ragout can be made in advance. Apples and blackberries make simply the best, most classic autumn dessert imaginable, and this is a particularly pleasing version.
