As with all my ingredients, I try to buy organic meat when I can, or meat that comes from traceable sources with high standards of animal husbandry. This might mean shopping at the local butcher, buying meat mail-order or visiting farm shops on my travels. Supermarkets too are paying attention to the consumer, and most of them stock a range of organic meat.
There are so many other good things to eat that it would be a pity to eat meat every day. With a richly varied diet, one can afford to eat good meat a couple of times a week.
