Pasta is never boring. Each season brings its own delights in the form of accompanying sauces: wild mushroom or pumpkin in autumn, hearty, meaty ragouts in winter, the vivid green flecks of fresh garden peas and broad beans in summer, enlivened with a few shreds of prosciutto.
