The Pleasures of Pasta

A convenience food that is elegant? Fashionable food that is comforting? Nutritionally impeccable food that is also deeply satisfying? Pasta is all these things, and more. And it is hardly surprising that it has moved far beyond its national boundaries to become everyons’s favourite food.

Pasta is never boring. Each season brings its own delights in the form of accompanying sauces: wild mushroom or pumpkin in autumn, hearty, meaty ragouts in winter, the vivid green flecks of fresh garden peas and broad beans in summer, enlivened with a few shreds of prosciutto.
