Even on those evenings or weeks when you don’t know who will be eating when and you haven’t had time to plan, shop, or cook in advance, and your pantry is bare to boot, don’t despair! Here are the strategies for those nights.

During these weeks, the obvious solution is carry-out cuisine or to serve breakfast as supper. An omelet or some other egg dish, or even a bowlful of hot cereal will do in a pinch and doesn’t require much in the way of fresh or even pantry ingredients. In the summer, cottage cheese mixed with fruit or vegetables frequently turns up on our table on nights like these.
