Although chicken comes in a variety of forms, I find there are three that are easiest for weekday meals. On the weekends I often roast a whole bird (or two) so that I have leftovers to quickly turn into dinner during the work week. Boneless chicken breasts are super fast to cook during the week and can be dressed up in endless ways. Chicken parts come in handy when I want the taste of chicken on the bone but don’t have the two hours it takes to cook a whole chicken.
