The basics of cooking don’t change. Obviously we all try to develop new recipes and some new methods, but for most stocks, sauces or pastries it’s ‘back to basics’. So you’ll find that I’ve included a few classic recipes in this book that appeared in Rhodes Around Britain, Chicken Stock and Veal Jus for instance. There are also recommendations for some ready-made products which remain the same. These are the foundations. I can promise you that everything else we do will be excitingly different!
