This is meant to be a practical cookbook. I want you to cook from it. That being said, I know some of the ingredients in this book may not be easy to find outside of Indonesia.

Thankfully, ingredients that form the foundation of many Indonesian dishes, such as shallots, garlic, coriander seeds, and palm sugar (as granulated coconut sugar), are readily available at grocery stores. While aromatics and ingredients like salam leaves, galangal, lime leaves, and terasi (fermented shrimp paste) make Indonesian cuisine special and distinct, they may be harder to find. In all my recipes, I try to offer close substitutes that may result in a slightly different flavor profile. Please don’t be deterred. You can still make a tasty dish even if you don’t have some or most of these specialized ingredients!
