It’s all about textures and flavours! If I’m planning a salad I think about the following: crunch, softness, sweetness and zing.

A good example of this is the goats’ cheese salad. We match earthy warmed goats’ cheese with crisp, sour Granny Smith apple; sweet blueberries with peppery rocket leaves; tender, cooked green beans with crunchy spiced pecan nuts and spiced blueberry compote with a zingy fruity dressing. It’s all about opposites and pairing.

When you’re creating a salad, don’t use all soft ingredients or all hard ingredients. Here are some examples of opposites that I use: soft creamy cheese with nuts or crisp apple; blue cheese with stem ginger; salty ham with mango or pineapple; chilli with honey and mint; roasted beetroot with lemon juice or a sharp dressing; smoked salmon with radish.
