I t’s very rare that I would actually cook any kind of dessert on a day-to-day basis. Instead, I tend to opt for a sweeter main course on days where my sugar cravings need sating. I was never raised to bake at my grandmother’s elbow, and cakes and cookies do not form part of my culinary DNA.

The desserts I do make are, by and large, cooked in a pan on the stove-top and are comforting and sweetly spoonable when ready. The Corner-Shop Brownies in this chapter are a notable exception. My children were born and raised entirely in the west and here they discovered the alchemy of weighing, measuring and melting to create the desserts of their dreams.
