One of the most important groups of edible mushrooms. They are distinguished by the primitive look of the gills, often no more than folds on the lower surface of the cap and sometimes totally absent! There has been a decline in the quantities found in recent years, especially in the Black Forest in Germany. It is thought that this decline may be due to acid rain; for this reason care should be taken never to over-collect.
