The chile is a versatile fruit that comes in a wide variety of shapes, colors, sizes, and hotness. It can be prepared in a myriad of ways: roasted (our favorite), fried, boiled, grilled, and/or fresh. In this glossary we focus on our favorite chiles.
All the chiles in this glossary are used throughout this cookbook to create a variety of salsas and sauces to compliment a recipe or as the main ingredient in a recipe. We use roasted green chiles and red chile sauce for several of our recipes. Following the glossary are the steps for how to prepare the two.
