Rice and lentils cooked together must be one of the oldest dishes on the subcontinent. Nearly every regional cuisine has its own version: it can be plain or highly spiced; it can be solid or like a soft porridge. Here are two Parsi versions. In the first version, the rice and dal keep their individual character; in the second, they are cooked to a comforting mush.
