Free-range eggs are considerably better in flavour than battery produced eggs, and you have the additional bonus of knowing that they are reared in humane and natural conditions. When broken open a fresh egg should sit on a cushion of white. The colour of the yolk is no indication of freshness.

It is possible to buy a vegan substitute for eggs, which is useful in baking. The nearest substitute in appearance and protein content is probably tofu. As I have said before, there are many other sources of protein, so do not worry if eggs are not part of your diet.
