For the new vegetarian in particular, meat substitutes can be a useful addition to the store cupboard. Although there is no lack of fibre and texture in a good vegetarian diet, some people miss meat a great deal. There are several types of meat substitutes available, but with a little imagination vegetables can be successfully used to create the colour and texture of the missing meat.
