Breadcrumbs and croûtons

Although the name is misleading, fresh breadcrumbs are not made from fresh bread. In order to grate easily, the bread should be slightly stale, say two days old. It is also best to make croûtons from slightly stale bread. Do not use very stale bread or you will end up with croûtons that are too hard and crisp.
