You should always cook pasta in plenty of boiling water, adding a little salt or lemon juice to taste. Aim to serve it al dente - cooked through but still slightly firm to the bite. If using dried pasta, follow the instructions on the packet for cooking times. Wholewheat pasta, which is brown, takes a little longer to cook than the common yellow egg pasta. Buckwheat pasta will cook within 2 minutes - the quickest of all the dried pastas.
Fresh pasta takes less time to cook than dried, perhaps only a minute or two for noodles, and 7-8 minutes for something like tortelloni.
