For ease of reference, this section is divided into hot and cold desserts. The hot dishes are mainly steamed puddings, which seem curiously English, but in fact, are found throughout northern Europe. They may be either savoury or sweet, and all are high in carbohydrate. Steamed puddings are traditionally made with beef suet. Fortunately, one can now buy vegetable suet from healthfood stores, which has been processed to work like beef suet. In my opinion, this fat works better than beef suet, giving a much lighter, more sponge-like crust.
