Food is one of the greatest pleasures in life and vegetarian food has another great bonus – it sustains us without hurting any living creature. I have been cooking all my life, experimenting with new ingredients and different mixtures, for the world of food and what is available changes all the time. We now want dishes which are fresh, simple and stylish, with clear, unfussed flavours and good satisfying textures. We want food free of additives and preservatives, food which sings on the palate and bleftens the senses. This book tries to bring you such food, for I have striven to make the most enticing feasts I could dream up. The days of stodge and blandness are over. This food would seduce any gourmet carnivore, however prejudiced, to celebrate a diet which can be relished for its fine and natural flavours as well as its health-giving properties. In other words, if I like it, it must be good – try it and see.
