Prominent among everyday vegetables in Asia are a handful of tubers. These have a longer history as staples than rice, as they are easy to propagate and grow, can be harvested year-round, and are generally easy to store. On the other hand, most are more or less toxic if eaten raw, and inferior to rice in taste, texture and appearance. Each, however, has its party tricks, a limited repertoire of really tasty dishes or snacks.
