The classic New York–style thin-crust pizza is big and round, with a firm, chewy crust. It uses a sweet tomato sauce and shredded low-moisture mozzarella cheese. But above all else, it’s defined by the pizza slice. A proper New York pizza allows you to hold and fold a slice in your hand, without that slice fracturing in half like a cracker or drooping like a soggy noodle.
