The Neapolitan pizzas from their namesake Naples, Italy, are legendary. Authentic Neapolitan pizzas cook in just ninety seconds in insanely hot ovens that reach 900°F (480°C) or more. That blistering heat puffs the cornicione—the rim of crust around the perimeter of the pizza—to seriously impressive, airy heights.
Per both tradition and the Associazione Verace Pizza Napoletana (the governing body that defines a “true” Neapolitan pizza), these pizzas use San Marzano tomatoes, fresh mozzarella, and fresh basil. Additional toppings are, of course, optional.
