Salad is a pathway to understanding.
Salads are about patience, faith, compassion, generosity, and wisdom.
In a good salad, there are no passengers.
Every ingredient is there for a reason, and would be missed if it were not present.
The dressing is the final touch, the thing that binds and links everything together, and must be made at the last moment.
It has to be cruel to be kind, in the right measure. The vinegar has to be sharp, so that the olive oil can soothe.
You need to pay attention, to sniff, to lick, to dabble and to dribble.
