TOFU: Tofu is a curd made from soybeans. Nutritionally, tofu is very high in protein, calcium, iron, and B-complex vitamins. Its inherent lack of flavor makes tofu a valuable ingredient for the imaginative cook because it readily absorbs other flavors and seasonings. It is available in different degrees of firmness, each of which is suitable for different types of dishes; for instance, I prefer extra-firm regular tofu for stir-fries, sautés, and similar recipes, while reserving silken tofu for recipes that call for pureeing. Before using any kind of tofu, drain it well, pressing out the excess water, and blot dry.
