I always use the same basic recipe for vanilla ice-cream, but the alternative flavours just keep coming! For most of these recipes the vanilla pod can be left out because the other flavours need to predominate.
If it is vanilla ice-cream you wish to make but you are finding it hard to get hold of fresh vanilla, then simply substitute a few drops of vanilla essence. The total basic recipe can also be replaced with tins of custard mixed with single cream, then add the flavour of your choice and churn in the machine. If you don’t have an ice-cream machine, then put the mix into a bowl and freeze, turning with a whisk every 15 minutes until frozen.
