Joe and Antonia firmly believe that organic farming principles not only take care of the environment but also produce healthier and tastier food.

Joe was born into a family of dairy farmers in a Bavarian village where every farmer made their own cheese. Joe studied agriculture then, in 1986, his sense of adventure led him to move to Australia with his wife Antonia. Soon afterwards, the Gretschmanns bought Elgaar Farm near Deloraine in northern Tasmania. They immediately set about converting the farm to a completely organic system. Joe planted herbs such as shepherd’s purse, selfheal, chicory and Persian clover among the farm’s grasses and installed a mixed herd of Jersey and Guernsey cows to produce the tastiest milk possible. The farm received official organic certification in 1991.
