Slow-cooked lamb shoulder with mint and cumin (get the lamb marinating overnight) + Baked mint rice with pomegranate and olive salsa (make the salsa in advance so that the rice is ready to put in the oven) Roasted asparagus with almonds, capers and dill + Tomatoes with sumac onions and pine nuts (the elements can all be made in advance) + Tomato and cucumber raita (this will keep in the fridge for 2 days) + Courgette, thyme and walnut salad (make the garlic oil ahead and prep the courgettes up to 6 hours in advance, just hold back on the seasoning and lemon juice).
