Dessert is an integral part of a meal, it provides balance and conclusion. It allows us to indulge in the sweet things of life, necessary luxuries that should be part of our daily ritual. Food is eaten for pleasure and purpose and it is within this context that I stress the important position of edible delights based on sugar and fat (the basic components of all desserts). There is no use in pretending they are not there by ignoring them, so liven up the tastebuds with a dash of sugar, served at the appropriate time, of course, and not to excess. Remember, too, that the cooking and proper execution of dessert is an exacting art, more so than other forms of cooking.
