This book is a tribute to my partner, Margie Harris, who has been part of the vision from the beginning and has given me her unquestioned support and devotion to an ideal. She is my greatest critic and my greatest fan and has made the entire process memorable, possible and endurable.

My Philosophy of life and work is based on the premise that life is too short to eat bad food. I am motivated by passion, care and integrity, not by profit at the expense of those qualities. My driving ambition has always been the pursuit of excellence and that is what guides me in my work and my life. Attention to detail is of utmost importance. Mediocrity has no place in my world; it smacks of sloppiness, slackness, indifference and many weaknesses. Strength of character, the ability to learn through criticism and the obsessiveness that forces me to push myself to the limits physically, mentally and emotionally affect the way I work and how I expect those around me to work. It breeds a toughness and it is a quality I seek in others.
