If eating ice cream is one of life’s ultimate pleasures, eating it with your fingers must be close to heaven.

Think ice cream sandwich, and you think, vanilla ice cream bookended by soft chocolate wafers. Once again, I have been unable to leave tradition alone. After peanut butter ice cream between ranger cookies, coconut ice cream between coffee meringues, and mint chocolate chip ice cream between fudge cookies, sandwiches will never be the same.

I wrote extra cookies into every recipe, in case of breakage or, more likely, nibblage—these irresistible cookies tend to get bites taken out of them during preparation. Slightly soften the ice cream or sorbet when you assemble them so the cookies won’t break when you press the sandwich together. Store in a single layer on a baking sheet in the freezer. Freeze until solid and then wrap them individually in plastic wrap to keep the flavors fresh.
