The federal government has established minimum standards for commercial ice cream production. It is beneficial to understand these, as they help identify how to make homemade ice cream taste its absolute best.

Without cream, you can’t have ice cream. By law, ice cream must have at least 10 percent milk fat, but ice cream made with the minimum fat really isn’t worth eating. Ice cream needs more fat to taste like ice cream should taste: cool and smooth. Most of the fat in ice cream comes from cream, and it provides not only flavor but also texture. However, there is a point where ice cream can have too much fat, making it too rich and heavy, and that’s why milk is also added.
