The following basic Italian sauces are delicious with pasta or can be combined with additional ingredients, as suggested in some of the recipes in other sections of the book.
In Italy it is customary to have less sauce with pasta dishes than we would normally use and the recipes in this book follow the Italian style, which you will probably prefer when you have tried it. One pint (600 ml) of the sauces in this section is enough for 1 lb (450 g) of pasta unless you like your pasta more moist.
