A wide range of Italian soups make use of pasta. Some are simple and light, while the combination in others of pasta with fresh and dried vegetables is a nourishing lunch or supper in itself, with bread and fruit to follow.
Although rarely served cold in Italy pasta does provide a very good basis for a variety of delicious and unusual salads, with cold meat, seafood and vegetables in summer lunches and buffet meals.
