So much of Italy is coastline - no wonder there are dozens of delicious seafood and pasta recipes! Some of the tastiest come from the tip of Italy, enhanced by the aromatic herbs of the south and the prevalent caper plant. Try inventing your own seafood pasta by mixing several kinds of fish together and simmering them in a tomato or olive oil sauce. All smoked fish is delicious with pasta and can be used in the same way as the smoked salmon recipe I have included (some may need initial cooking). Fresh cod or haddock with mushrooms is another good combination. It is easy and rewarding to create new, delicious seafood dishes.
