Pasta is one of those wonderful foods that can take on a number of different guises by being combined with different ingredients. For that reason, it might be thought that there is no end to the possible combinations; however, it is not, or should not be, a case of‘anything goes’. The following recipes for modern pasta dishes have been devised with this very much in mind: they involve combinations of authentic Italian ingredients that have not traditionally been put together in this way.
