I like these dishes, partly because they bring me back to the home cooking of my youth in Italy. But I like them even more because they are always good to eat. You will find that most of the recipes in this section take longer to make, and to a certain extent are more complicated, than other dishes in the book. However, you can prepare them completely in advance and then relax and enjoy the company of your friends. These dishes can even be frozen, although I do not recommend this, because pasta loses its fresh flavour when frozen.
