When I first arrived in this country, pasta meant ‘spag bol’ or canned spaghetti. Now, some 40 years later, pasta appears on most British tables, and the shapes, sizes and sauces on the market are almost without number. Yet, even so, far less pasta is eaten in Britain than in any other country in Europe. It is my hope, in this little book, to convert more people to eating such a delicious and versatile food. Pasta is also a very healthy food, and, contrary to popular belief, is not fattening. The sauce may, or may not, be fattening, but pasta is not.
