The ingredients used can all be found in supermarkets or in Italian delicatessens. I have given substitutes only when they do not alter the final result.
I suggest choosing another recipe should you not find the correct ingredient: substitution often kills a good dish.

Preparation and cooking times

Preparation and cooking times are included at the head of the recipes as a general guide; preparation times, especially, are approximate and timings are usually rounded to the nearest 5 minutes.

Preparation times include the time taken to prepare ingredients in the list, but not to make any ‘basic’ recipe.

The cooking times given at the heads of the recipes denote cooking periods when the dish can be left largely unattended, e.g. baking, and not the total amount of cooking for the recipe. Always read and follow the timings given for the steps of the recipe in the method.
