Making Tortelli

To make tortelli, you should read about making anolini (above). You may use one of two methods:
  1. Cut out discs 2 inches in diameter with the rim of a glass or using a pasta wheel. Put some ripieno into the center of each disc and fold to form half-moons. Press down the edge to make sure they are totally sealed.
  2. Make 2 sheets of sfoglia. Dot one with rows of ripieno 2ยฝ to 3 inches apart and carefully cover it with the other sheet. Press down between the balls of the ripieno and then cut out individual tortelli using a round ravioli press, the rim of a glass followed by a knife, or a ravioli wheel. Press down the edges to make sure they are totally sealed.
