George Girardey published several traditional recipes using noodles in soup, as well as a simple recipe for fish dumplings, in his Handbuch über Kochkunst. I am using his dumpling recipe here in combination with a noodle soup recipe from the Horstmeier family of Huntingdon, Pennsylvania. Rockfish dumplings should be light and about the size of large marbles. Where striped bass (rockfish) is unavailable, any fish with a firm flesh may be substituted.

Before preparing the soup, make the noodles and dumplings as directed below and set them aside to dry.
